Glass cream tile....

Glass tile is very hard to set, costly to install for that reason. It is also not going to go well with this countertop. Look at some cream colored tile that has some detail along the top edge. The tile glaze can have a bit of a brownish reveal in the detail. Red Rock tile company has some of this sort of tile.

I have never found glass tile to be hard to install , I do it all the time and it gives a bit of sparkle to a room.

My initial thought about glass tile was that it would be too contemporary/modern for our kitchen and that we should stay with natural stone (like Crema Marfil?) but this is making me think outside the box. I also was concerned that a cream colored backsplash would just blend in with the cabinets - adding nothing to the overall look of the kitchen?

Pick up a color in the granite, and use that color tile for your backsplash. Alternatively, you can use a cream colored tile with a darker grout color that picks up a color in the granite to tie the two together. That way you will have some "pop" but won't fight with the granite counter.

Travertine subway tile as used in pics, don't like what they have under the range hood. Your kitchen is beautiful

I just came back for a visit since I am on my desktop instead of ipad and looked at your kitchen again. It is going to be so stunning. I think any of the suggestions will be wonderful. Go through Houzz and search white kitchens. You'll see plenty of examples of ceramic and glass tile. Then grab some samples at the tile store, enough to make a reasonable size sample board. Get a glue from craft store that will peel off after you are done with them so you can return tile if that is important to you. Adhere tile to craft foam board (the kind kids use for science fair projects but a single sheet instead of tri-fold) and set them up under cabinets. Live with them a few days.

Your granite is beautiful. Don't detract from it! I would go with a cream tile, but put it on the diagonal! That's what I have and love it! BTW.....tiles are 4 by 4 inches, but placed like diamond shape on wall!

Stay classic pick a shade of almond or cream that goes with the cabinets or the counter and do a great beveled edge subway tile or penny tile. We used an among penny mosaic from Somertile. Part of the house is laid in a herringbone, part is in a traditional brick pattern.
