Pressure canning help

last modified: 11 years ago

Hello,

I have two home canning questions from the last batch I did and want to be sure I'm being safe.

First, shortly after starting the processing time I heard a funny sound that I was sure was my first jar breaking in the canner, so I turned the heat off and let the pressure fall back, opened up the canner and checked, taking the 4 or so jars on the top rack out to see the bottom rack. No broken jar (don't I feel silly) but in this process the lids poped down on a couple of the jars I set out. I put them back in and began venting and processing again for the required time. After I was finished I noticed about 3 jars out of my dozen or so that weren't bubbling and I suspect it was those that poped (but maybe not). Lids sealed on the jars. Do I have any reason to think these aren't safe?

Second, I was canning chicken breast and one lid did not pop down. I left it alone because I've read they can sometimes take a while. I checked in the morning (less than 12 hours since I took them out) and it still hadn't poped. I put this jar in the fridge and was planning to use it this week...is this ok?
