Some of my faves are..

Salt and pepper

Lemon pepper

Ranch

BBQ/Cajun seasoning

Sour cream and dill- use powdered milk with dill, garlic, and onion.

If you are feeling adventurous, try soaking your squash slices in a marinade before dehydrating- I love a mix of soy, ginger, and lime. I've heard of folks soaking their chips in orange juice or pineapple juice to make a fruitier chip, but I have not done so.

If you like it sweet.. try a sugar and cinnamon- or a sugar and cayenne pepper.

Just be careful when choosing your flavorings to avoid fats unless you plan on eating them right quick. Fats can turn icky when dehydrating at "veggie" heat levels. And be careful with applying your seasoning- a sprinkle can quickly turn into a coating. Sprinkle is good- coating is not.

Cavenders Greek Seasoning is our favorite. We also do some with just sea salt and fresh ground pepper.

Thanks so much you guys! I had tried a variety of veggie chips last year and didn't like any of them. They all tasted either too strongly of squash or my seasonings were overpowering. Today I started out with just s&p and a very very light dusting of garlic salt. They should be dry tomorrow, so I will evaluate then. We Love Cavenders Greek seasoning! I will definitely try a batch of that and one of ranch. How thick do you like to slice your chips?
