Induction cooktop: should I? What brand?

I'd appreciate any info on induction cooktops. I'm in the market for one and of course, all I see are fantastic reviews across the board. Not very helpful. I'd prefer to cook on one before buying- just to see the differences, but since I can't, please help me make my decision! Can you use any sz pan/pot on any sz burner, or do you have to match them? Does induction truly make a "rattle" noise, if so is it bearable? Do I really need 5 burners, or would 4 do the trick? Also, does burner arrangement really matter, and if so, which arrangement/brand is preferred? Lastly, should I do one w/a bridge, or is that overrated? Thanks!

We have an Electrolux with a "bridge" element. It allows us to use one side with the griddle for pancakes. We love it. Very quiet.

I'm in the same boat as you Jonesie. I do know that I want an induction cooktop but I am stumped as to the brand and what size. I do cook a lot but I really only use three burners at a time. I feel that 5 might be excessive. Can anyone else give us input?

We have a G E profile and I love it.there are 4 burners I wouldn't need any more. There are 2 medium burners 1 small and 1 large.this configuration works well for us.. A small pot won't work on a large burner. There is an occasional buzzing with one of our pots, but not very loud. It really doesn't bother me.

We put a new induction cook top in 2 years ago. It is a Jenn-Air, 4 burner with a bridge. There is one large burner that fits large stock pot, and the other 3 burners are smaller size. If I am using 2 larger pots, I can use one of the smaller burners and it works fine. I love how quickly it brings water to boil, temperature regulation more precise, and it is easy to keep clean. The sound does not bother me at all. The one thing I miss is being able to use Teflon or Silverstone no stick pots- they do not work because on metal content.

I 'think' I want one too! ...next year:)

As an aside, I have Teflon coated pans that work fine provided that the outside of it is magnetic.

Hi Smit, I will have to go shopping with a magnet for a new Silverstone frying pan then. The ones I had did not work. After scrubbing my stainless frying pan for quite a while after making scrambled eggs for my son, I will definitely find a Teflon one that works! Also, for the original poster, my cooktop has 1 large, 2 medium, and one small burner. The most I have ever used is 3 burners at the same time and I have not used the bridge yet.

If you are near an Ikea, several of their Teflon frying pans work perfectly. I guess since Ikea is European, a ton of their pans work well with induction and are clearly labeled as appropriate for induction. Bonus, they are very inexpensive and hold up pretty well.

I recently read about power sharing. Apparently Miele is the only brand that doesn't. All burners, going 100%, at the same time. Nice feat, but unlikely I'd be using it like this. Anyone have input in this feature? Also, being all digital, how is the response on the controls? I'm a big fan of knobs and buttons (ie: I turn it, it turns on/adjusts, lol) I feel like knobs are more accurate- too bad there's only like 2 options to pick from. I've seen ss rimmed cooktops. I've read how that's a "con" due to scratching/denting...opinions?

    Oh boy... Decisions decisions!

After a lot of research on this back in the winter, we ended up with a GE profile. Had to get the 5 burner because that was the size necessary to replace the gas cooktop I was having removed from previous owners. Unless you're cooking for large groups of people all the time, you'd probably be fine with four. It also depends on your space, whether 30" or 36" would work better.

I too wasn't thrilled about the lack of knobs or the configurations of most of the cooktops, but it has been fine. No complaints and the controls are responsive. Ours does make clicking noises sometimes. I am very bothered by noises and while I'd prefer it not make the noise, it's tolerable for the most part. During my research though, I read certain brands of and materials of the pots can make a difference for this. There wasn't much to choose from since we're not in a large city, so we ended up with a Costco set. Think I had read the Sam's Club set might make less noise.

We opted for no stainless steel edge because I didn't want a groove for crumbs or spills to get stuck in. Figured a free edge would be easier to clean. Was hard to find one with no stainless steel edge and went through a lot of trouble to get it.

One of our local appliance stores does cooking demos, so check in your area for a non-big box store, if possible. You may be able to try one out, it might not be the brand you want though, but at least it will give you an idea. And another local appliance store had one hooked up, come to think of it. Usually an expensive brand with all the bells and whistles. Fun to play with.

Thank you so much for bringing this up. We are in the midst of a kitchen gut and remodel. Because we do not have access to gas (which I loved and had for 20 years), we went with induction. We also could not use a cooktop (several reasons) so went with the Bosch slide-in. I sure hope I love it. Of course, the concept of putting down a sheet of newspaper under the frying pan before I cook bacon sounds like the absolute best way to clean up!

beseaside: Did you get the Bosch Slide in induction range? If so, how

do you like it. If not, please post after you have had a chance to use it.

    thanks

It will be installed in about 10 days. I will let you know.

aflysomegolf: is your Jennair a 36 inch induction cooktop with undercounter

Wall oven directly below it or is it a slide in Range? Cons? Thanks

I am seriously considering the Bertazzoni Induction/gas combo cook top. Love gas, but also want induction for ease of cleaning, etc. Appreciate your opinions..TY

I love my Samsung. Love the knobs. I also enjoy the duel flex oven .. Induction is great heats up so fast and cools off quickly..

Donna: Please tell us more about which model you got, e.g., Benchmark etc.

    and your cooking experience. TY

Hi Lexie. It is the chefs collection model number SamsungAuthorized Dealer
    Samsung™ NE58H9970WS
    Stainless Steel
It has a duel oven. Can bake at different temps when the flex tray is in, or if you have a large Turkey just take out the flex tray and u have a huge oven..it also has a warming tray at the bottom to keep things that are cooked warm. The induction top is great.. I love the knobs , gives u the feel of a gas stove.. Things cook fast.. Water boils in less then half the time..cools off in minutes. As soon as the pot is off it turns off automatically ..then it is warm but you can put your hand on the burner right away without burning. I am just leaning a lot about it . I have had it for about 3 months.. I love it. Hope this helps you.

My daughter has a Fridgidaire and it is wonderful. You do have to get used to keeping the heat down after you reach boil, but it cooks the 'food' and the stove is so easy to keep clean. Pots and pans clean up easily too but you do have to adjust the heat down as it i so efficient.Just a swipe with a damp cloth keeps the top clean; amazing. And the food tastes better I think. Eggs over easy are beautiful. I want one.

The only bad think was Hubs dropped a mug and went to grab it and knocked it onthe corner of the stove and cracked it on the top corner.....but.....we are ordering them a new top. Thank goodness we do not have to replace the whole unit.

Don't buy the GE PHB920SFSS! After two month of use, I started to try learn how best to use the convection oven. The fast pre-heat feature is a joke. I tried to cook a pizza at 400 degrees and after 40 minutes the oven still did not feel particularly hot, even though the preheat feature had beeped after 10 minutes. I checked with a regular oven thermometer and it was only at 325. I kept testing the oven temps with regular and convection modes, and even bought a new thermometer. At the same time, the convection fan was making a clanking sound, and when testing food with the probe, it seemed to be off by 20 or more degrees compared with a quick read thermometer placed in the food. I called GE service and they came within a week. After ordering parts, they came back and replaced several sensors, the control panel, and the fan. I have to admit that I did not thoroughly re-test the oven until the night before Thanksgiving when I made the first of my two 20 pound turkeys. I had read that making them in the convection oven was fantastic. When I took the turkey out of the oven it looked beautiful, but when I started carving, parts were completely dried out and other parts were raw. Luckily a local store that was open Thanksgiving morning still had a couple of turkeys and I was able to get a replacement. I cooked it on regular bake, no convection, and it came out fine. This morning I called Sears, where I bought the oven, rather than GE service. They are going to look into getting me a new range. Feeling that everything will be OK, I went to warm some soup for lunch, and the induction top wouldn't work. I turned on the burner but it kept going off. After turning the circuit breaker off, then back on, it is once again working, but who knows for how long. I can't get rid of this appliance soon enough!

On a positive note, I love induction cooking (when it works.) I bought a single induction burner at Target and a cheap induction pan at Marshall's to test out whether or not I really wanted an induction stove. I was quickly convinced of how much better it is than electric. When I got the stove, I bought of set of Circulon Premier Professional cookware and it has been great. I've filled in with a couple of AllClad pots that I found at Marshall's and TJ Maxx.

So now I need help. Which induction range should I get to replace this horrible GE? It needs to be 30", free standing, and I don't care whether it is convection or not.

    Do the cooktops scratch easily???

I'm curious if anyone researched radiation related to induction. From what I've read it appears to be safe for the person using the range, but what sort of an effect does it have on the actual food thats cooked with this process?

Induction does not use radiation. It is very safe and fabulous to cook on. Food doesn't get stuck to the surface. Following is a definition of how induction works. Your pots and pans must be ferrous (a magnet must stick to them). I use Le Cruset, cast iron, stainless with a core. Only 1 saute pan didn't make the cut when I switched to induction. I love it. It is so much more responsive than electricity and more consistent than gas. BTW, I got a Bosch.

"Production of an electric current by changing the magnetic field enclosed by an electrical circuit."

Love my Bosch induction cooktop. 4 burners are plenty for me. I cook most days, though we eat out once or twice a week for dinner. Dinner for six or eight most Sundays, and more on holidays. So much nicer than any cooktop I've had before, including my gas ranges and smoothtop electric ranges over the years.

A number of studies indicate no health hazards from cooking with the magnets. There is a very low buzz from the cooktop when working, not loud, and I can't really hear it with the exhaust fan turned on, actually.

drememin: Did you get the Bosch slide-in range with Induction Cooktop or

did you get the Induction Cooktop and Wall Oven? If you got the Induction Cooktop with Wall Oven, were you able to put the Wall Oven under the Induction Cooktop? Thanks!

jhwolk, we have a whirlpool double oven induction range. Love it!! It fits your criteria, you should check it out! We've had it for a year with no issues to speak of
  • 10 years ago

lexi65, I have the Bosch cooktop, and a kitchenaid convection microwave over oven on an adjacent wall. I wanted the oven mounted higher than it would be under a cooktop, as I'm not getting any younger, and it's much easier for me to move a 20+ pound turkey or big corned beef from the wall oven to a counter. With my old range, I'd often have to ask my husband to take the heavier roasters out of the oven for me.

I like the wall oven, but it does blow a bit of heat back into the kitchen venting, unlike a slide-in or conventional range. I was going to buy a slide-in, but I'm glad we changed the plan and installed the wall oven instead.

I'm not tied to any one brand for appliances. I bought a Samsung refrigerator, Bosch cooktop and dishwasher, and KitchenAid for the convenction microwave/wall oven combo. It's true that the handles don't all look the same, but only the wall oven and refrigerator are really visible to anyone but me. I selected the appliances based on the features and sizes I wanted, and their energy efficiency. The last time I bought a suite of appliances in a kitchen remodel, and I was sorely disappointed in the performance of two items, though happy with the rest.

arknj If you're worried about scratching an induction cooktop just place a sheet of parchment paper between the pan and the burner.

drememon, how do you like your Kitchen Aid wall oven microwave combo? We are considering going with this but are never sure to interpret reviews. What model did you get? Any pros or cons with it?

Also, how do you like the Bosch products? I am getting ready to outfit my brand new kitchen and need some help picking products.

I was told not to get induction cooking if you have a pacemaker.

weldon31 That also is my understanding.

there is an alsatian chef on pbs, he does all cooking demos on portables, induction, a small smoker for inside, did not know you could get one, small grill, portable convection oven. I have done some of this previously and been impressed with portables. we have a small kitchen, and 99.9% of the time, i use max 2 burners. and that is hard now to reach. we are probably going to go over to a good size work bench with plugs and the various portables stored beneath or hanging above. for those waiting longer how about this new ikea marvel

Movie: All-in-one digital kitchen table for Ikea suggests recipes · More Info
Weighs it, tells you what it is, what it goes with, gives you recipes based on what you have, and then you put the pot on there and cook it. Now if we could just get it to chop!

havingfun, that is just too amazing. Thanks for the link. I toured a home once with a builder we were interviewing. His last client didn't want a cooktop, at all. She didn't cook a lot, used the oven and microwave most of the time. She purchased four of the induction burners, and pulled them out as needed. She liked the way her kitchen looked without the cooktop interrupting her reclaimed wood counters. Not for me, but it worked for her.

yes, i too need a working kitchen, but i always need countertop, to small avail in my kitchen. we end up using a cutting board over the sink. So the ikea isn't up yet, and the portables are so great- i have worked on ones now that heat faster then my stove, and we would then have room for both of us at one time, i think-still working out details. if/when we sell, we will just give a credit to have one installed, i think it might be well worth it to me.

What did you end up buying Jonesie?

Any feedback on the Samsung 36" Induction Cooktop NZ36K7880UG that was launched this year? Looking for an Induction cooktop for our family (4 kids + 2 adults) and are a little concerned if 4 burners will be enough for us with our kitchen remodel underway. Looking for feedback on Samsung vs other brand cooktops, looking at Kitchenaid wall oven and fridge and Sharp drawer microwave to complete the kitchen.
