Eggplant can be partially dried in the oven and then frozen with no problems. Getting it fully dried for jar storage is possible but more difficult and the resulting color doesn't appeal to many. But instructions are available for it if you wish and the seasoning used is your choice - anything from just S&P to dried oregano or dried basil.

A common practice is to bread the slices as you would for EP Parmesan, bake them about 1/2 way, then freeze on cookie sheets before bagging.

Fresh garden beets, sliced thin work fine although again you get some darkening. But dehydrating already canned beets is a real waste of time and energy. Could you make Harvard Beets our of dried beets? Sure. But you can make them out of canned beets much easier and with a better end result so i don't see what you would gain by drying them and they turning around to rehydrate them again to make the Harvard Beets.

Thanks, Dave, for answering. What I meant was could I take the canned Harvard Beets and dry them==to be added to soups, etc. I hate messing with beets. They get all over everything, but I know they are healthy. Don't have any luck growing them though. I make lots of soups in the wintertime especially since I am by myself now. Nothing better than a hot bowl of soup or a stew. Barb

I think we have a terminology issue but I'm not sure.

Harvard Beets and beets aren't the same thing. Harvard Beets is a cooking recipe, a side dish made with beets - beets in a sauce made of sugar, cornstarch, orange juice sometimes, a bit a vinegar and simmered in that glaze and served hot. While they can be made with canned beets you could not dehydrate Harvard Beets because of the sugar glaze and all the other ingredients in them. You may be able to buy canned Harvard Beets, I don't know, but I have never seen them. If you want to dehydrate beets you would use either fresh garden grown or sold in the produce section or you would use plain canned beets which are canned in water and have no other added ingredients.
