Help me rebuild... Hurricane Sandy Recovery

Hi Friends,
My home was destroyed by Hurricane Sandy. The home is in NY about 2 blocks from the ocean. I love this place as it was/will be my sanctuary. My goal had been to knock down this old (built 1926) beach bungalow and build a new home. Unfortunately, that is not possible right now so I decided to rebuild the home doing most of the work myself. If I could hire an interior designer, I would but funds a very limited. I have completely gutted the home and now have started laying a new sub-floor and framing. I have included the floor plan, a picture of the home exterior prior to the storm, and the current status of the project. I have purchased the appliances (stainless steel finish), envision off white walls and ?thinking light floors. Kitchen cabinets also thinking white / off-white. The home is only 750 sq. ft. the lot is 40 X 40.

I have placed the washer/dryer in the bath and will do a neo-angle bath.

I just am at a loss on the floors. I was thinking laminate with ceramic tile covering the kitchen space and bath. Any thoughts on color scheme, how to finish the place so that it stays light & airy and looks beautiful will be greatly appreciated.
