We need to see photos and perhaps a sketch with dimensions.

You'll need to leave room in front of the pantry cabinets and also in front of the mudroom area for traffic flow. I'm hoping that these areas will be built with pantry cabinets no more than 24" deep, and only 18" deep for the mudroom cabinets.

Building a booth in this space may make not be the best answer. A more open approach may be better, giving the room a more spacious look. Consider a 36 x 72" table with the 36" side placed against the window wall, or pulled out from the window wall enough to allow one chair at the window end of the table. Along the sides you could use either benches or chairs. I've drawn the layout for you which I will show below in a separate comment.
