gardenmom, I often make the Bread and Butter pickles in thick slices, probably 1/2 inch thick, and they come out fine. I can't see any reason why you can't cut B&Bs any way you like, including chunks or spears, like any other pickle.

If I have really big cukes I cut them in half lengthwise and then crosswise using a small scalloped-edged cookie cutter down the length, through the skin to the middle, and then slice them 3/8" thick or so if need be. They look like the ace of clubs in playing cards. --- Sorry - but I sometimes get bored making pickles and I have to find entertainment when bushels of cukes happen but then I do get little pieces of the excess to use for relish that way without much more chopping. --- I use the B&B recipe from Bernadin.
