Understanding that there are a lot of safety rules for preserving food, I recognize my ignorance and thus am being cautious and asking for advice. There are of course a lot of recipes on the web on blogs. I was looking at pickling lemon cucumbers (and will later look at Persian thin skinned types) and I came across a recipe that lactofermented them. This is the specific recipe. Reading it, it occurred to me that I do not know how to safely evaluate a recipe using this method. What should I look for to know whether or not something is safe?
