In my experience a lot of butters are like loose jelly or jams, or more like rather tight applesauce or ketchup. Or kind of an inbetween, and called a butter because it really isn't a jelly, jam, sauce, or ketchup.

Sounds darn tasty though, might have to give that one a try since I'm up to my ears in white tomatoes this year.

"Butter" is a term sometimes used to label anything that is a soft spread. "Dipping sauce" might be a better term for this recipe given the components. Sounds like just a tomato flavored honey for dipping.
