I soak them, and then use a brillo pad.

Baking soda and a little water, those green scouring sponges work great.

Deglaze the pan after cooking. Heat up the dirty skillet, then pour in a little cold water, and scrape with a spatula. All the stuck on mess comes loose and the pan is easily cleaned. Any remaining residue will come right off with a baking soda scrub.

For really scorched pans, heat some water in it, add some dishwasher powder detergent and let soak. That stuff works like a charm.

Bar Keepers Friend is good on the stainless but I don't know about the ceramic.

Dawn Platinum is also great for soaking pots and pans when needed.
