From some of the past discussions the search pulls up:

"if it all plops rather than slowly pours off the spoon it is too thick"

"if it is as thick as commercial canned is then thin it a bit"

"if it is as thick as you think it should be it is too thick because it will get even thicker during processing"

"it should slosh some in the jar or it is too thick" (it should move freely in the jar)

"if air pockets develop as you fill the jars it is too thick"

Then there is the volcano test - if it acts like flowing lava fine but if it is shooting out balls of lava it is too thick.
