Jatoba floors

I plan on installing Natursl Jetoba (engineered) wood floors in a herringbone design. The space to cover is 1,500 feet. Is it true that the color of the natural wood changes significantly over a one year period to a very dark reddish color?
If yes, is there any thing one can apply over the wood to slow or stop that process?
