Went to market on Saturday and saw this gigantic oyster mushroom. I told the farmer that I was traveling and could never use it all, He said to freeze it. It was from an organic farm stand and was quite inexpensive for the monstrosity! Thank you Tantre Farms for talking me into adopting this creature!

I decided to weigh it - 3jbs 5 oz That is 1510 grams for my Canadian friends

My nephew said make lots of risotto.. I defrosted som scallops and figured out how to make risotto- for some reason I never tried it. DH loved it. I used Saffron and smoked paprika in the dish so it was similar to a paella dish that I make with pearl couscous

A lot of mushrooms left. I cut them up and froze them. I have 5 quarts of mushrooms to make more risotto, soups and pizza toppings. Here is one tray ready for the freezer! I also gave a friend a big ear to use for her risotto.

    It's a good thing you dismembered it. You never know when those night creatures awaken and eat you in your sleep.
