They do look great. :) How did you seal the jars? Use any dessicant patches in the jars?

Depends on how long you want to store them and how you store them. If you plan to use them within a couple of months, fine. But in our house we dehydrate for maximum long term storage and that requires treating them IME. And we also vacuum seal them. Assuming there is air in your jars, their shelf life will be limited.

Thanks for the feedback Dave. I also plan on having them for long term storage. I didn't put desiccant patches or vacuum seal. How do you vacuum seal canning jars? I guess I should look into buying the desiccants.

If you want them in vacuum sealed in jars then you'll have to buy the equipment. FoodSaver makes a vacuum seal attachment for canning Jars but you have to buy the base unit too. We vacuum seal ours in FoodSaver bags, not jars.

I see. I already have a FoodSaver so I'll have to look into this. It must require special caps?

What a plentiful harvest! I toss the slices w/ lemon juice before dehydrating - never tried cinnamon, tho. Ours never last long enough to find out how long they'll keep = J

Thanks for the impetus to try drying apples for the first time. They aren't a tradition here but the technique perfectly suits the small windfalls coming over the fence from next door's Golden Delicious. Not many people here have dehydrators. I just put the slices in my 'Rayburn' for 24 hours. The oven was off but the heating burners alongside keep it just warm.

No problems with storage. They were eaten within two days of drying. I did half with cinammon, none with lemon. We gobbled them up brown or not.
