Adjustments for Beef stew

The approved recipe calls for

4 to 5 lbs stew meat

3 qts (12 cups) of potatoes

2 qts (8 cups) of carrots

3 cups chopped celery

3 cups chopped onion

1 1/2 tbs salt

1 tsp thyme

1/2 tsp pepper

This is way, way to many potatoes for my family's taste and not nearly enough juice. We like half way between soup and stew. Now I know I can add broth or canned tomatoes after opening the jar but the potato ratio is way out of line for us and now that there are only two of us a half gallon of stew (or stewp) is enough for 3 days. I suppose I could can it in pints but the ratio of potatoes is still way off.

So if I cut the potatoes to 6 cups each, add 2 cups cut green beans, drop the carrots and celery to 2 cups each, divide this equally between 7 quart jars and fill with liquid from boiling or tomato juice would I be in danger of not having a properly processed jar? These are the proportions I normally use to make a large pot for freezing..

The processing time for soups are the same as for the heavily potato laden stew. I know, only use approved recipes but this will have less veggies and more liquid in the jar than the approved recipe.
