Yield on NCHFP spaghetti sauce

I'm studying this NCHFP recipe, and trying to figure out their yield number, just 9 pints for 30 lbs of tomatoes. Compare that to their standard tomato sauce recipe, which is only tomatoes and requires 21 pounds for 9 pints. And the spaghetti sauce has additional ingredients. It isn't being cooked long enough to really reduce the volume. How can this be? Has anyone made it?

The background to this question is that it is the dead of winter, I need to get some ground meat out of the freezer to make room for a half lamb on the way to the butcher and am thinking of canning up spaghetti sauce. I'd need to buy commercial crushed tomatoes, but the proportions/cooking time don't make sense for the final yield. I'm pointing to the recipe without meat because it's a simpler example, but the same is true of the NCHFP recipe with meat, only more so.
