What herbs in particular?

It will depend on what specific herb(s) you are growing.

Rosemary or sage or even thyme will be fine with seven more weeks of growth, although those are better grown from cuttings rather than seeds.

Basil will outgrow those tiny pots quickly, but harvesting them aggressively will help keep them going and could tide them over for the extra weeks.

Parsley or cilantro/coriander won't do very well in those small pots at all.

If you are using decorative pots, you could transplant things to 4 inch square or round "nursery cups/pots" and sell them or give them away, and start again in late April or early May.

Knowing where you are located (your climate zone) and which specific herbs would help get a better answer.
