Just in the process of deciding to open the ceiling or not. Can I ask what part of the country you live in, did you have to insulate for very cold weather, if so what did you use. Were you able to remove the joists without re supporting the roof? What was the additional cost for doing that, if you don't mind me asking. Thanks, looks fantastic!

The dropped,
flat ceiling joists at the old kitchen were non-structural, so it was not an issue to remove. We kept the
existing roof joists in place. This project
is in Orange County, CA (city of Irvine).
The weather in Southern California almost averages 70 degrees year
around. We do still insulate all roof,
ceiling, and walls using batt insulation per the state energy code
requirements. Hope this helps. Good luck with your project.
