Granite Mistake -- Fix It or Live with It?

My granite countertops were supposed to overhang 1.5" past the cabinet (or 0.5" past the panels). This would have left us with 36" counter-to-counter from island to wall counter. They left an extra half-inch on both sides, leaving us only 35". And to top it all off, they correctly cut the other wall, where we have plenty of space (40") between that wall and the other side of the island...End result being an aesthetic "problem" with more overhang on 1 wall than the other, and a functional problem of losing an inch of clearance between counters. Is this something that can be fixed onsite, and if so, how will it look (i.e. is it worth opening a possible can of worms)? Thanks in advance!
