Try a mirror as a backsplash. Reflections add color, interest and make room look larger....and easy to clean! Could also go to craft store and get some glass paint, or fake lead, to add some glitz to mirror. Or get a sheet of mosaic tile or some border tile and glue on top of mirror. Could try out effect with an old mirror. If you use mirror holder pins instead of adhesive this could be easily removed with no harm done if you decide you don't like it. And, if there's a Habitat for Humanity Restore in your area, might get the mirror for very little money. .

My backsplash is white tile so to add color, I used some great pottery plates. When they get splashed with grease, we just wash it off and rehang.
