Each tuber is about the size of a small potato/sweet potato, in my experience. I've put them in 8"-wide by 12"deep plastic containers and they did well.

the container i have is only 8" deep. the directions say to plant 2-3" deep. is 8" too shallow? do the tubers produce roots from the bottom or the top

This is my first time growing them from tubers, so I have very little advice to give unfortunately!

I'm guessing that 8 inches depth will be enough if you're sure to transplant right when the plant grows to be transplant size: 12 inches tall.

I didn't separate the tubers at all in the pot I used, I just buried the whole cluster and 3 weeks later about 3 different sprouts came up. Now the plant is very bushy and about 6 inches tall. 2 flower buds are forming as well!
