I think I read in a Wednesday food article that it takes zillions of seeds to actually make mustard! A few plants aren't going to do it!

It doesn't take tons of seed to make mustard...google for "homemade mustard recipes" and there are tons of them.

Mustard is normally planted for the greens rather than the seeds. But yes it will take several plants, gone to seed (bolted) to get enough seeds (3-4 Tablespoons) to make a 1/2 pint of homemade mustard. You can get about 1 to 1.5 tsp. per plant average. If you really want to make a lot of it at one time then buy the seeds from a bulk supplier.

And yes, there are lots of recipes but keep in mind that many of them are not intended for canning but for fridge storage and fresh use only.

Thanks for the info. I've been wanting to try this for a while but so many projects go unfinished. I found an interesting recipe with ingredients I like and did plan to just make by jar for the fridge. Seems pretty easy. I'm originally from Maine, about 20 min from Raye's Mustard Mill. They have so many varieties and my favorite is one called "Moose-a-Maquoddy Molasses," so I'll be adding a tad of molasses to try to recreate it. "Maple Horseradish" is another good one!
