Well there's a BlueStar 36" wall oven that can accommodate an 18"x26" baking sheet (just a matter of how important this is to you ....)

Ideally, I want a 30" width. I considered the Capital stove but, I want something waist high so I don't have to bend over too look at cookies and bread or heave a heavy roast/turkey or Dutch oven out for the holidays.

Yes, the 3/4 size sheet pans can be found in most restaurant supplies in a heavy gauge aluminum. They work very well in 36" ranges that don't quite hold a full-size pan.

i personally find full-size sheet pans cumbersome at home, especially without a baker's rack to accommodate them. In smaller kitchens, it can be difficult to maneuver these trays when hot.

Thanks Debbi! If nothing else, at least I can roast a full pan of veggies even if I need a smaller cookie sheets for airflow.

I use the half sheet pans in my home ovens. They are more practical in the limited space of a residential kitchen. They are easier to store. You can also fit a half sheet in a residential refrigerator, too. I also have a few quarter sheet pans. I save the full sheet trays for commercial kitchen use.

Here's my Bluestar oven that fits a commercial size baking sheet.

Does anyone have more information on this? BlueStar is a good option, but I would love to know what other possibilities there might be.
