Lacanche Cluny oven size

I have read and re-read many of the older discussions and would like to confirm what I discovered with long-time users and avid cooks.

1. Although the size is small the way it heats, the oven doesn't need the proverbial air circulation like American ovens.

2. You can fit an 18 inch sheet into the oven (it's deep enough).

3. You can fit a pizza stone in it. There's enough room.

I bake breads (my main concern), roast meats, and at times would like to stick Le Creuset (5.5qt) into the oven. I also bake occasional cakes and pies.

Will Cluny size oven work for me?

Hello Bread_n_butter,

The Cluny oven (gas or electric) is 15-3/4" w x 18-1/4" deep (inside dimensions), so any piece of cookware, pastry sheet or pizza stone under these dimensions will certainly fit.

As long as there is some space between your cookware / pastry sheet and the walls of the ovens, air will naturally circulate inside. That's why it's also important to preheat your oven "properly", to make sure that not only the air inside but also the oven walls are at the right temperature. This eliminates hot / cold spots inside the oven and ensure a faster temperature recovery after the door is open (more important for "sensitive" recipes!).

I make bread. I have a couple of heavy duty pizza stone from William-Sonoma. The ovens work great. Half sheet pans fit well. We've had ours for 10 years now.

I use a 7 quart cast iron Lodge dutch oven in my Cluny ovens with no problem. The only thing I can't do with my largest dutch oven is put it in my warming oven due to the handles which stick out on the sides.
