I'm pretty sure it's ok to sub strawberries for raspberries in Ball's Chocolate Raspberry Sauce, since strawberry pH is slightly lower than raspberry, but I'd like an expert to confirm :) I emailed Ball and I got the following, which I expected: We have not tested this recipe with strawberries using the water bath canner. However, you could make the sauce with strawberries and freeze the product.

Ball Raspberry Chocolate Sauce, makes 6 half pints:

• 1/2 cup sifted unsweetened cocoa powder

• 6 TbspBall® RealFruit™ Classic Pectin

• 4-1/2 cups crushed red raspberries

• 6-3/4 cups granulated sugar

• 4 Tbsp. lemon juice
