Yes, they are viable, and yes, you might see new shoots from the tuber.

The sprouts were white because they didn't have any light, and I would guess that they are stretched out, too. Some growers nip off those long sprouts so new ones will grow faster. Other growers do exactly what you did. Either way, as long as the tuber doesn't rot, you'll be seeing a healthy plant growing in the next couple weeks.
