Stella Cherry

I do have a good sized back yard, but have had little luck with cherries, because we get a lot of rain and our yard tends to have standing water. I just ordered a foot tall Stella cherry, which I'm planning to plant in a large container. I've read conflicting opinions about winter care. I'm in zone 9 (Houston, Tx) and we have generally mild winters, although we do have a hard freeze once in awhile. When should I cover or move my Stella? I've read that cherry trees need a period of cold weather every year in order to bloom and stay healthy, but how much cold is too much? I'd appreciate any advice.
