How, and whether, any plant root will grow more plants depends on how much energy those roots have stored. Some can, and do, produce more plants for a couple of years after all top growth has been removed, however, diligence is needed since any new growth that produces leaves that can manufacture nutrients those roots can store means a longer life.

Some of those types of plants, Ivy comes to mind, can grow leaves form bits of root left on the surface and those leaves feed the roots which grow more leaves which make more food to feed those roots.

Keep an eye out for any new growth, leaves, and cut them off to keep them from feeding those roots and the roots will die.
