Zuk pickle recipe? Not into canning

There was one in the paper today, but wanted so much sugar! It said they would last up to 3 months in the fridge.

I would prefer more of a dilly type recipe, no processing. I have plenty of picnics/parties to bring them to in the next couple of months (and of course Aug 8th is leave a zucchini on your neighbor's porch day...why not some zucchini pickles????) Nancy

You can take any of the approved cucumber pickle recipes that calls for more than a 1/2 vinegar brine, and substitute zukes for the cukes. The recipes that call for only a 1:1 ratio of vinegar to water would be borderline. And you can reduce the sugar a bit if you wish too but it does play somewhat of a safety role by binding loose water molecules so don't reduce it by more than 10-15% .
