Since the inside of a cabinet doesn't get much use you can paint it an accent color or use mirrors cut to fit or use a wallpaper or contact paper. The cabinets will really pop !

Graham has the right idea. Aristokraft will sell you cherry veneer panels that are stained to match. They may also offer matching printed vinyl panels. Most panels come 1/4" thick, and are very easy to work with.

(They should also offer loose cherry veneer shelves, if you want those to match also.)

They should have skins that are thinner than 1/4" -- they're intended for exposed ends of cabinets near microwaves, for example. You could do that. Of course, the shelves might still be lighter -- any chance you could just live with the two-tone effect? attribute it to the lighting... :)

You could replace the shelves with glass as well.

There is a peel and stick veneer from 3m that is about 1/32'' thick. It is an actual wood veneer so when you stain it, it will match. A local woodworking shop might carry it if you can't find it. Make sure to do the peel and stick and not the iron on version. It is really simple and can be cut with a paper slicer, super easy to work with. Good Luck!

By the time you buy skins, shelves, and pay someone to install all of that, you could have just bought the cabinet with the needed Matching Interior upgrade.

This gives you the perfect opportunity to introduce an accent colour. Mirrored back and/or lighting would up the style quotient.
