2016 Miele vs Wolf Steam Oven/Wall oven

last modified: 10 years ago

I am doing a total kitchen remodel and have decided on all my appliances except the steam and wall oven. I am doing SubZero integrated fridge/freezer, Wolf range cooktop, Wolf wall coffee machine, Subzero beverage fridge and Kitchenaid dishwasher. Choosing the Wolf steam/oven combo would qualify me for $1000 rebate but I love the Miele for it's intuitive menu style and the variety and depth of it's preset food menu. The interior also looks better in that the back wall is "solid" whereas the Wolf has several "holes". My main concern in choosing the Miele however, is that if something were to go wrong, how hard is it to get service and parts? Does anyone have experience with either product? I have read through a few discussions on gardenweb, but most were older and I'm looking for advice on the newer models. Thanks!

We tested both out at Pirch and love the Wolf. It's easier to clean, yes the chef cleaned them both in front of us.

The miele has a broiler element and I believe you can get it plumbed. Wolf doesn't come plumbed. Neither was important to us.

The Miele takes extra steps to program the temp, time and steam level each time you cook. I didn't like that it required a time to be set.

we chose Wolf for ease of use and ease of cleaning although the interface of Miele was better. Plus, wolf is easier to get parts faster.

Post this on the appliances section of Gardenweb. Lots of current posts and people discussing this very thing.

I don't have newest models. I have Wolf L-series single wall oven (not steam), Wolf wall conv. u-wave & S-Z 48" side-by-side, all from Pirch & 2-y.o. Install'n corrective maintenance on wall oven & annual preventive maintenance on all 3 responsive & effective. BTW, Miele d/w, also from Pirch, replaced K-A <5-y.o. that was worthless on energy-saver mode. It's 1-y.o. & no service to date.

DO NOT BUY MIELE!! We bought the latest version of their Steamed 30inch wall ovens and have yet to get them functioning correctly. The first set leaked to the point that my wood floor warped and I had to have it serviced 3 times before they replaced the ovens. The next set does not steam at all, and there is a crack in the internal finish. I am working to get them replaced AGAIN. I also bought their warming drawer and am about to get my 3rd version of that. And I bought their speed cook micro/convection oven and the Microwave just went out so they will be out to repair it. They were installed in early Nov. of 2015!! Run away! Run far far away from Miele!!!!

@Lois - that sounds terrible. Can you share the model numbers and whether Miele did the installation? We are about to make the decision to go for both 24" combi steam and convection from Miele. I did not see that they make a 30" steam oven. I hope you get these problems resolved soon.

I'm thinking Lois' experience is an unfortunate rarity. Miele has by far the best reliability record in the industry. The avg. failure rate for a new appliance is abt. 20% & theirs is <5%. Our CKD recommends Miele often in her projects. She wouldn't if prior clients were having Lois' experience. She also did the Miele display in a Pirch store, which is probably the result of having done so many projects using Miele. We don't have any Miele cooking appliances, but we do have a 1+-y.o. Miele d/w. My wife absolutely loves it & we've had zero.zero problems w/ it.

I don't have the models here at work. I have their latest 30 inch double wall oven which is piped for steam. I have the 24 inch m-touch speed oven ( not steam). I have their warming drawer. I have had two different issues with the warming drawer. The first changed settings every time you opened the door. They tried to fix and then finally replaced it. The new one did not have that issue, but now it warps (makes audible BOOM) and then doesn't open smoothly. The microwave recently went out on my speed oven and I had to bring my 20plus old microwave out and put it on my counter

Thank you everyone for your responses! I decided to go with the Wolf steam and wall oven. The work is underway in my kitchen currently! I will try to post my comments about the ovens once they are installed and i have a chance to use them. Now to choose a kitchen sink! Anybody have any experience with Create Good Sinks seamless drain sinks?

Create Good Sinks and the sink I'm thinking of purchasing:

No experience w/ this sink. We got Kohler 8-degree SmartDivide, which is also 16-gauge w/ sound insulation. My wife loves it.

We got the Miele steam oven (DG4084) and speed oven (H4044 BM) in 2012 because we wanted them under the counter to free up counter space, and they were the only matching ones we could get that way. I'm delighted with our choice because we absolutely love both. We decided not to get the steam oven plumbed and haven't been disappointed. It's so easy to fill up the water container, so why pay a plumber? The Miele speed oven is the only one (in 2012) that had a broiler.

I have had the combi steam oven (plumbed) for a few months. I wish I had asked about cleaning. I assumed a steam oven would clean itself. I never asked about cleaning (though I doubt my salesman would have been honest or detailed about it). I regret very much that I made this very expensive purchase for a product that has to be manually cleaned almost every time you use it. In retrospect I would have bought a convection/microwave combo.

@nancyomartini and others, how much cleaning IS involved in cleaning the Miele steam combi oven? we're close to making a purchase and have that model in our sights -- thanks!
I have an update. They have now replaced my 30 inch double wall oven for the third time. They found that when the second was installed, they linked the water line. It is now working. They also replaced the warming drawer again. It is starting to periodically do the same thing as the previous models where it warps at high heat and it changes settings when you open the drawer. I don't know that I have the energy to go back to Miele again regarding the warming drawer. The speed oven was fixed a while back and has been trouble free since. I'm attaching a photo for those that were asking what models I have.

i have a miele steam and you have to clean it each time. it leaves about 1/4-1/2 of water on the bottom (about 1/2 cup) that you have to mop up --- that's not a wipe up, mop up. it's not that easy to do because i also did not anticipate this and my steam oven is not right next to my sink. i used my steam oven 5x in 18 months. i confess that i don't know how to use it, the instructions are difficult for me to understand, the master chef does not cook simple things like 1/2 pound of clams. i tried to call miele for cooking help and they told me to google for utube. i love my miele dishwasher. my miele convection micro is ok (also master chef there is not helpful). we are doing a whole new kitchen on our waterfront home and not sure if we will go wolfe this time. miele is having a good promotion deal that subzero wolfe is not ...

we got delivery in nov 2015, our steam oven had 2 visits to fix (circuit board issues) and our dishwasher had a pump issue. all fixed under warranty and no issues since, but a disappointment after paying all that $$$.

Cleaning that Miele steam oven really isn't a problem. You're not actually cleaning it, just soaking up the water condensation left from the stream. it takes only one or two paper towels and it's mostly dry. They recommend you leave it open to prevent mildew. We use ours to steam artichokes several nights a week, lobster on special occasions, asparagus at least once a week, plus other things. The panel is very explicit with what you're steaming and names artichokes, asparagus, specific fish, almost everything by name. So it's really easy. I throw the metal trays into the dishwasher (a 2 drawer Fisher and Parker- love it, too). One thing I love about steaming is that there are no pots on my stove and the kitchen looks better. I'm sorry if anyone is having problems. Miele is great.

agreed, it's only about soaking up the water not scrubbing. maybe there is something wrong with mine. definitely takes more than a paper towel or two (and yes i use bounty!). like i said, it's probably bc i need someone to show me how to use the master chef, but i haven't found it easy, and have even asked the appliance store for a demo and they don't do it.

Do you have a Pirch near you? Or Miele showroom? You can get a live cooking demo

Hi Michelle and Bob, I'm wondering now if we have the same steam oven. Mine is the Miele DG 4080 series (not sure which one, the manual lists 4 numbers on the cover). I don't think mine is the Master Chef. Have you tried Youtube? People have uploaded videos to check out if the manual isn't helpful. From Google: https://www.youtube.com/results?search_query=how+to+use+miele+steam+oven+

Scroll down and you'll find several videos to watch, and hopefully one will be helpful and apply to your specific one. I've attached a photo of my steam oven's display panel for vegetables to show how easy it is to use. I've seen others that aren't as easy, so hopefully you have one like mine.

And to be truthful, my two paper towels get REALLY soaked!! Good luck!

    Nancy

I don't think you can go wrong with the Wolf. We have used ours almost every day for the past two years and it has always worked beautifully.

Lois did you mention the steam oven leaking was due to a kinked hose when the appliance was installed? As that’s what you said happened in another post, and that all was well now?

I have not had a positive experience with two Miele ovens: DGC4084XL
Combi Steam Oven and the H4684B Oven. Neither oven cooks evenly. Both
have hot and cool spots which show up most when baking cookies. The
Combi Steam is a lot of effort to use between the two containers for
water and cleaning the oven afterwards, and does not produce better
results than a steamer basket for vegetables. The reheat function of the
Combi Steam takes forever and still does not really get the food hot.
The lower oven is very hard to clean. The built-in roasting thermometer
never worked despite 2 visits from techs. The only positives are that
the Combi Steam does a nice job on proofing bread dough and both ovens
look good from the outside. I wish I had listened to the advice by
Consumer Reports which gives these overpriced German ovens a very low
    rating.

I have the Miele DGC 6705 XL plumbed in combo steam oven and have been very happy with it. The plumbed version drains and does not need to be mopped out. It does need the occasional clean, but so far nothing terrible.

We were looking for plumbed, so only compared it to the Gaggenau. The Gagganau was better engineered, but had terrible software. For an appliance such as this the software is important. We use the sous vide function quite a lot. In that function at least temperature is accurate to +/- 1°C.

Hey all, I am very happy with my Miele Combi Steam oven. I found that just using it and gaining experience was helpful, but what really helped was starting to read the blog called Steam and Bake. The blog has lots of helpful tips and recipes, and it demystified the whole steam oven thing for me. I would definitely buy one again.

@smm5525 which brand did you finally pick and what is your experience? We are in the same boat right now. Deciding between Miele vs Wolf, 30" wall oven with Steam oven and drawer MW OR 30" wall oven with Speed oven. How difficult to clean steam ovens? Can you use your steam ovens as a convention oven ( no steam). We want to go with wolf because this set will install just next to the Subzero refrigerator.

We have the Wolf convection oven and steam oven. We just wipe the inside of the steam oven with a cloth. We are extremely happy with the steam oven.

I sold my home and my Wolf steam oven was the one thing I thought about taking with me! I'm doing another reno and will buy it again. Loved it. We used it 90% of the time, and the regular ovens the remainder. It does require a mopping out of the condensation, but I wasn't bothered by that.

It, and my 36" induction cooktop were by far my favorite kitchen investments.

@mark1993 which model do you have for Wolf convection oven? How long do you have it? Did you experience any blue chipping problem? Can you use your steam ovens as a convention oven ( no steam). Thanks.

@Chroma Natrix does gravy spill inside the steam oven while cooking or reheating? I saw some very messy from inside steam ovens pics. I have OCD for cleaning :)

    last modified: 5 years ago

Yes, we can use the steam oven as a convection oven without steam.

We have had no chipping problems, but we have only been in our new build since mid April.

We have the following appliances: Subzero refrigerator and freezer columns, and wine fridge, Cove dishwasher , 36 induction cooktop, and the two ovens previously mentioned which are the M series.

I have the Miele steam oven and bought it in 2016. We had tons of issues with it including the steam really being more of a stream, leaving my bread dough sitting in a pool of water. We also had issues originally where it would not steam at all. Discovered the hose was kinked. I’ve tried to use the steam burst setting and that does not seem to release steam. The bread setting (French bread) seems to now function after they switched out the oven. I’m not sure when I would use the steam except for the French bread setting to get that great crunchy crust. And as I said before the steam burst does not seem to work. For the money I spent on the oven, I’m not sure it was worth it for the steam. I do, however, like the oven and the easy glide racks. I also like that the racks can stay in during oven cleaning. Oh, one other thing about this oven that drives me nuts is that the top oven operates quietly and whenever I use the bottom oven it’s annoyingly loud. And that noise goes on for about 45 minutes after shutting off the oven. For that reason, I only use the bottom oven when absolutely necessary 😞.

    Hi Sunarakaa!

Gravy might spill as in any other oven, but you can place something under it if you think something might bubble over. Because these are small ovens, anything that would spatter in a larger convection oven is closer to the walls so could burn on the stainless steel walls. The steaming processes are no problem, because it is moist and you can just wipe things down. Also, at least in my Wolf Steam Oven, the rail guides on the side walls that hold the various shelves & pans are removable so you can clean behind them. That said, it is a convection oven so things will be moving towards fan in back, including any spatters.

Taking a cue from Mark1993, my kitchen choices:

36" Subzero Freezer; 36" Subzero Refrigerator; Kitchen Aid Dishwasher; Miele dishwasher for crystal and china; Wolf Transitional E series 30" oven; 30" Wolf steam oven; Wolf 36" L-series oven; Scotsman 15" undercounter Icemaker (with drain and pump). Happy with everything after 5 years of no problems. The icemaker was very loud, even though It was in the butler pantry, not right in the kitchen. But we loved the ice! Good luck with all your decisions and I hope you LOVE your new kitchen!

I've have the Miele (under the counter) for 10 years now and have not once had a problem with it. Love it!

Chroma Natrix did you use self clean for E series 30" oven? Did you notice any chipping in blue enamel coating? Any pros or cons about Wolf Transitional E series 30" oven?

    last modified: 5 years ago

I did use it and I did not notice any chipping. All I had to do was wipe a little ash from the bottom with a damp rag after it was finished The only issue I recall was the oven lights burning out after the warranty period. You can replace them yourselves - I had to order them from a certified dealer - pkg of 2 for $24. It wasn't completely easy to find those, but other than that, their website and tech info is really good, especially the installation specs.

@Chroma Natrix which model do you have it for wolf wall oven and steam oven? can I please see the pic of them stacked together?

    On the right

Those two are 30” E series transitional. The one on the far end is 36” L series ( only one that came in 36” wide version). Good luck with your decision!

Thankyou!! Your kitchen is so beautiful. How long do you have these ovens? Any feedback? I am so nervous before ordering them because of wolf wall oven reviews:) I am also planning to order 42" Subzero Refrigerator; Wolf Transitional E series 30" oven; 30" Wolf steam oven; Wolf 36" cook top range , Wolf 42" vent hood.

Is it ok to put ovens, just next to the refrigerator?

    What is your countertop?

    Really appreciate your help.

@sunarakaa- posting this in case it helps you in your decision process. The list of our appliances is posted above in this thread.

Thanks Sunarakaa! I had them five years with no problems. We just moved to a new home we plan to renovate and I will buy all the same appliances. If I had to pick the “love” pieces that were new to me then and I now don’t want to live without, I’d say the steam oven and the 36” induction cooktop. I’ll never go back to gas!
I wanted light stone countertops but knew that marble was very problematic in the kitchen because it stains easily so I chose macaubus quartzite , which is a natural stone, because it is supposed to be much harder and less porous. It is, but not enough that oils and fats and certain colors won’t stain it. It was a pain to keep it up, so I will go with a manufactured quartz countertop material next time.

@mark1993 beautiful kitchen. Thanks for sharing!!

@Chroma Natrix thanks for your response. Its really helpful. I really wanted to go all Wolf but little bit skeptical because of their oven's blue enamel chipping problem but now I am more confident with that :). My ovens will go just next to the refrigerator. I am going with Cambria quartz most probably with their Britannica series.

What did you like most about the induction compare to gas range?

So much easier to keep clean. No dangerous flames. Sleek. Full range of heat levels (unlike regular electric). I already had a lot of cookware that worked on it. So fast on and off. Safe around kids and my spouse (absent minded... potholder and paper towels on fire LOL). You can actually put down paper under your pots and pans to avoid mess. they also make silicone mats you can put under your pots. If there's no pot on the "burner", it turns off. On mine, you could put a griddle or large roaster over two burners and bridge them to heat up the whole thing. I've also heard that there may be a phase-out of natural gas usage. I am totally sold on induction. If you live near a place where they can demo these appliances, make the trip. You're making a huge investment in your kitchen. Get someone to show you how they work so you can feel totally confident. Even if you live away, it's worth the flight/drive/trip.
