Well this was a first in my 30 years of canning. I canned peaches in light syrup in a boiling water bath on my new smooth top electric range; I also ran another canner on a portable induction burner. The batch on the induction burner is fine, but the 2 batches on the range both had siphoning during and after removing from the canner. I let them sit in the canner with the lid off and the burner turned off for the recommended 5 minutes. All the jars sealed, but I can see peach flesh stuck at the top of the jars that lost liquid. I put everything in the fridge. What went wrong? Can a burner run too hot? Do I have to re-process these?
