Ask how they will measure for the countertop. They should use a laser/computer system. Ask if you will be able to review the template placement on your selected piece of granite to understand and approve the pattern flow where there are seams -- this is important if your granite slab has a lot of movement.

Do not assume the cost variation is all reinforcement. Honestly, there is a lot of variation even if you give them the exact same specs, including specifying reinforcements.

Price variations could also relate to their grading system for the stone. I went to one place that had three different prices for different slabs of Alaskan white that they'd assigned different grades. Not sure how common this is, but I think it was legitimate: There was a very visible difference between them all.
