No problem safety wise - just color and texture changes. Raspberries are plenty acidic for BWB. With a few exceptions most fruits can be combined with little effect on safety.

The apples remain the primary ingredient of course so basically you can use 3 parts apples to 1 part (or less) raspberries.

Is lemon juice necessary? The NCHFP instructions don't include lemon juice, but the BBB does. I don't have a tree anymore, so I use regular grocery store apples when they go on sale, no windfall or damaged apples.

Homemade applesauce is just so much better than store bought.

The BBB instructions are the most current and were added to compensate for the different varietal pHs as well as the pH of the water added as some add much more water than others.

Its your choice.

It took me a while, but I found some pH data for various varieties. The ones that I prefer all fall in the range below 4.0.
