USDA studies have shown that listeria, if it is present, can grow to a level of risk within 3 days in the fridge. Its growth is slowed but not stopped by refrigeration. It will continue to grow even if highly acidified AND in the fridge.

Ultimately the decision is up to you and based on the level of threat that listeria may pose for you personally and how you plan to use them (cooked or uncooked).

Freezing is the storage option that is recommended for them once the container is opened.

Just a thought, Lucille.... May I suggest that you line a cookie sheet with parchment or wax paper and freeze each anchovy separately. Once frozen they could be stored in same container. This way you would be able to retrieve as many as you wish per serving.
