Hi Blake! I garden in Central Florida and really enjoy my cutting garden. I use garden boxes too and it works well and makes life much easier. It is the perfect time of year to sow seeds for spring blooming. I sow a variety of things now and again in the spring. You could try stock, tall snapdragon, ammi majus (like queen annes lace), nasturtium, larkspur (needs to be cold at night in order to germinate), cornflower, calendula and orlaya grandiflora. I'm sure there are lots of other things too. All these can be sown now and they will grow on to bloom in the spring. I'm trying a winter series sweet pea this year too. In the spring you can sow lots of zinnias ( I like the Benary's series and sunflowers. I garden organically so I use the organic raised bed soil that you can get at home depot.
