Pruning for peach different than apple. In either case this is one of those things not easily explained on a forum. Also which cuts to make depends on what style the tree is intended to be developed into. Apples in particular have multiple different shapes that they can be trained into.

Your best bet may be to look for web sites with illustrated pages discussing pruning of peaches and of apples. If you are in the US your nearest USDA Cooperative Extension office will also have printed materials on this subject, if you can get there during open hours. There may also be classes and seminars in your area where pruning of fruit trees is demonstrated. Garden centers there for instance may hold a few of these, in season. Going to one or two of these would enable you to see it demonstrated in person.
