When to harvest late-planted shallots?

I visited a nursery in late July and they were selling seed potatoes & shallots half-price, so I figured I'd give them a try. I've never grown shallots before; the package directions said the shallots could be planted in spring or fall, but other than that were a little vague.

Anyway, I planted them, and they look good but the leaves still are green and show no sign of dying back. We have not yet had a frost (we are 2 weeks beyond the average first frost here in central Ohio and none in the forecast for at least the next 5 days!).

Should I plan to pull them when frost threatens, or should I leave them in the ground (a raised bed) and simply mulch them with chopped leaves? Thanks in advance for your suggestions.
