Late 1700s Colonial Doors Stain

We have two new Simpson doors in Fir (sidelights will be painted white to match house).
What sheen would you use? We are being told high gloss would be typical for the time period since it would have been shellac based. Should we go with time period or do something more satin?
Would you use a different color stain to begin with?
