Prime everything in white. Install whatever new lighting and light bulbs you will be using. Take an extra field tile and a square foot of your mosaic tile, plus a floor tile in a box to the paint store. Pick up a couple sample cans in warm lightest gray and a fan deck.

By varying the paint sheen for walls, ceilings, doors, and trim, a single color paint will look great! I currently have BM Palace White on all of my walls, ceilings, crown molding, doors and trim. The variation in the sheen gives a subtle difference that is very nice. Apple pie's advice on "lightest" gray is gold.

The paint color will not look the same in the store as it does in the house. And even in the house different walls and different times of year will make the same paint look different. Conceptually though I have no problem with you creating a unified canvas by using the same paint everywhere. By varying the color of the other items you will create a feeling of separation of space in an otherwise open floor plan.
