We have some ideas for you, but they depend on your family situation...

If you have kids / pets, we suggest avoiding carpet and going with a hardwood or LVT floor wherever possible and using rugs / runners where preferred.

If kids / pets aren't an issue, we suggest using a high-traffic carpet for the stairs and hallway. A more plush carpet can be used in the bedrooms.

As for color, we suggest darker and bolder colors (and even patterns!). They will contrast nicely with your neutral wall and trim colors.

Choose the carpet first. There are millions of paint colors, but not millions of carpet that you will like.

Depending on budget, You want low, dense pile…Mohawk Smart Strand is a good start. When holding a sample, bend it, just as it would curve over the stairs. You do not want to see a “smile”.

For example: you could do Mohawk Urban Gray and use B.M French Canvas on the walls, You will need a good white for your woodwork and use it on your ceiling, as well, in a flat finish.

Here's a few ideas:
Roycroft Mist Gray (a 2015 color from Sherwin Williams) is a great grey/beige mix that works beautiful with white trim.

Regarding carpet, there are several options, but here's a few different styles that work well with that color-
