Backsplash Dilemma for Galley Kitchen

Ok, so I am about to start renovating my small galley kitchen in my NYC apartment. The backsplash is going to extend up to the cabinets (18 inches). Where would I stop the backsplash on the sink end of the counter? Do I extend it to the end of the wall or extend it only to where the cabinet comes out? Or do I only have the backsplash on the one wall and not on the side wall next to the sink?

At the other end of the counter is the oven with the building support walls next to it. Do I wrap the backsplash on the back wall and then the beam and not the side wall?

Also, any thoughts on only putting backsplash on one wall? The other side only has a counter top, cabinets, and refrigerator. Would it make the room look uneven?
