Foundation is just in... I'm thinking in advance of all the choices we need to make:-) and was wondering of general ideas.

Pale Oak BM

kjoy1- I picked up a color swatch of the pale oak as well. It goes definitely in the right direction we are looking for. Very elegant- but wondering if enough contrast to white ceiling and wood work in a room with lots of sunlight? Also which white would you pair with pale oak for trim, baseboards, wainscoting?

Talk with your customers as it is dependant upon their preferences. Do they like muted shades of off-white simplicity? The colonial time period envoked more subtle hues, often using earth toned pigments. That being said, that does not just mean brown tones. If they prefer bright and rich tones they can still be incorporated throughout the home. If you are able to a Benjamin Moore Paint store close to you, go there and look at their "Historic Colours" selection (labelled HC). They have an extensive and very well represented selection that would fall into this time period. You can talk with your clients about what colour shades they like or dislike and put together several a few colour schemes for them or have them look at some samples you picked up. Colour is mostly about personal preference in a lot of cases as colour is in the eye of the beholder.

Are you taking no rugs, no furniture to this home?

I love a gray/ green when nothing else has been decided I use rite of spring from C2 I sometimes cut it 25% depending on the space but it works with everything and is not gray just grayed I love it with wood too

Grey Mirage with White Dove trim is my go-to.
