Bathroom remodel - bad tile or bad installation?

We are having a full bathroom remodel. They tore it down to the studs and installed new walls and ceiling and cement board. The tile job looks really messy to us and they keep blaming it on the tile. They already had to tear down one wall because it was the wrong width. They said the porcelain tile is bowed and the glass tile is uneven because it is natural. Shouldn't the corners be square and grout lines the same width? And why would a 2 inch wide piece of tile be bowed and stick out? We did learn the subcontractor subcontracted and left the new guy alone. We think it's crappy installation but want to make sure we are not being picky.
