Selecting a multi-graft fruit tree help?

I noticed most of the multi-grafted fruit trees (particularly apple and stone fruit) at the nursery today had pretty narrow, steep crotch angles where the different graft variety comes off of the trunk. We're talking about 10-20 degrees.

I know scaffolds are supposed to be around 45 degrees or they run the risk of splitting. Does this hold true from the grafts as well, or are they somehow "stronger" that scaffold branches and wont split? Thanks
