For climate zone 10, sometimes they go dormant, sometimes they don't. In this climate they behave like sort of semi-deciduous trees. If they lose all their leaves in the winter, that's normal. If they don't, that's perfectly normal too.

It depends on variety too, more cold-hardy varieties are much more likely to go into dormancy.
