Oh gosh. Can we talk cabinet and fixture layout first? Can you draw out this space with window/door locations and dimensions as well as a quick sketch of the whole floor so we can see how they surrounding rooms relate to this one?

We don't want to move plumbing so this is the best we've been able to come up with.

Just a tip as you continue to debate track vs. can lighting. Depending on the local costs in your area and the type of lighting you want, track can be as much as can lighting. It can even be more if you go with the fancier and more modern "rail" lighting. I recently installed two tracks, on two separate switches, with 9 LED track heads and it set me back 1000 for the hardware alone. I went with track for specific reasons but I had received estimates on cans at about $100 per can. So it may have been less expensive.

That said, I like the track lighting and I would recommend it. Unfortunately, I am not that good at lighting so I can't help with layout.
