You can't put a pocket door in a load bearing wall.

I've looked at your photos and drawing. It appears you are not adding any square footage to the room. Your current space does not allow for anything other than a tub / shower combo...in the same spot as your existing tub. Keep the door to the hall, a barn door gains you nothing. You would greatly benefit from a custom made vanity with drawers. "Stock" vanities are made with a huge "void" (hidden by doors) so they will fit any number of plumbing configurations. A cabinet maker, in consultation with you plumber, will allow that "void" to be very small, thereby allowing you much more drawer space. My hall bath vanity has a drawer under the doors which is deep enough to hold rolls of toilet paper. You must have your sinks onsite when the design is worked out. The plumber will move your supply and waste pipes accordingly. You will need to know the height of the tallest "thing" that will go in a drawer so it can be made deep enough. Get a toe-kick drawer also, you won't believe all the "stuff" it will hold. My vanity is maple, custom painted, with an integrated sink top. The cost was less than a cheaply made one, with fewer drawers, at Home Depot.

Thank you for the suggestion regarding the vanity. I will look into that. The hallway closet is 14" deep and there is a bedroom behind it.
