Not Layout 2! Questions for you...

-Are you planning to have seating at the island?

-Do you want or need to keep a kitchen table?

-Is the bay window all the way to the floor or above counter height?

The bay window not all the way down to the floor, however, might have 1 foot lower than the counter height.

Of those, I think Layout 3 is best but would suggest working with a prof. kitchen designer.

Please clarify, Your goal: Have a kitchen island with seating; not move sink or cooktop/range; keep sink & cooktop/range in same place; red egress is constant, blue area egress to dining can change? Is that a cooktop with oven in different location, or a range?

In layout 3, is it possible to rotate the island?

I would say layout 1, but I love to cook from scratch large batches. The more countertop space, the better.

I'm going to attach something that gives you a big island in the center, access to all walkways, makes room for desk and add'l cabinets, give you opportunity for pendant interest lighting over island and a good work area. The bay window that makes for awkward flexibility and too small seating area without connection to cook goes away. No change in doorways and slightly improved traffic.

The refrig could be moved to opposite the powder sink where there is plumbing thru that wall but easy access to cook & everyone. It is not any further from cook and sink than it was to begin with. Or leave it where it is. Cook is in center of things but the kitchen now seems huge and up to date. You lose minimal Sq Ft but gain a window above countertop and and more current look. A built in desk area/drop zone goes where the refrig was moved from or in the new section on the left wall where there is plumbing in powder room wall. You could add a small desk where fridge was depending on how the refrig slides in there, or add yourself a mail drop zone and cookbook nook/computer desk over there. The bay window, after the changes, could be dbl the size of the kitchen sink window but match in style, finish height. Keep in mind how it would look form the outside if that is your front side of the house. Make the elevation balanced.

It might take a little more patience and longer to save the money for add'l cabinetry in order to get what you really would like and what works for your family. Maybe the window glazing or look needs upgrading anyway? Hint, custom cabinetry sometimes is no more expensive than stock sizes at Home depot. I've seen that on two projects. And you can do online cabinetry now.

A good designer is worth their weight in gold. They do this day after day and good ones know what costs more. Spend the $250 or so for an hour's consult. Have an exact list of problems you want to solve and your budget and they can work magic in two hours. Have your significant other, too, because even when they say "Do whatever you want", they have an opinion.-------- Good Luck! Oh, just pay attn to the first upload, I can't delete the other two. Blackqueenn, you came up with a similar U-shape that I had just posted above. Makes for great connection to cook and family at island. Caution: The refrig in your plan is so close to the sink and how one accesses both when there is more than one person, or even just one, working in the kitchen, and might be a problem. You have a nice large area to work with; use it. The example I posted above requires less moving of cooktop or sink and simpler cabinetry manufacture.

However, in your idea, if you did move sink to bay window area, it is not too weird to keep that bay window protruberance as additional deep countertop behind the sink. And that doesn't reduce the house's Sq Ft for resale. You still have the cost of window change but not of exterior wall and possible permit hassles on footprint. Costwise, see my first plan above.
